Description

Crunch Salad is a vibrant, texture-packed dish loaded with shredded cabbage, crisp veggies, protein-rich edamame, roasted cashews, and crunchy chow mein noodles. Tossed in a tangy sesame vinaigrette or creamy dressing, it’s a satisfying and refreshing meal or side dish that can be easily customized with your favorite protein.

For the Salad:

  • 1/2 head green cabbage, finely shredded

  • 1/2 head purple cabbage, finely shredded

  • 2 cups carrots, matchstick-cut or shredded

  • 1 cup fresh cilantro, chopped

  • 1/2 cup sliced green onions

  • 2 cups cooked edamame

  • 12 cups roasted cashews (adjust to preference)

  • 2 cups crunchy chow mein noodles (optional)

  • Cooked chicken, shrimp, or other protein (optional)

For the Dressing:

  • 1/4 cup olive oil (or any neutral oil)

  • 3 tablespoons white vinegar

  • 2 tablespoons sesame oil

  • 2 tablespoons sugar

  • 1 teaspoon salt

  • A few shakes of garlic powder

  • Optional: 1/4 cup Greek yogurt or mayonnaise (for a creamy version)


Instructions

  • In a large bowl, combine the green cabbage, purple cabbage, carrots, cilantro, green onions, and edamame.

  • Add roasted cashews and chow mein noodles (if using).

  • Whisk together all dressing ingredients in a separate bowl. Add Greek yogurt or mayo if a creamy dressing is preferred.

  • Pour dressing over the salad and toss well to combine.

  • Top with your choice of cooked chicken, shrimp, or any protein. Serve immediately for maximum crunch.
