Description

This Crunchy Chicken Romesco Sandwich features crispy, breaded chicken breasts topped with a tangy and smoky Romesco mayonnaise, fresh lettuce, and tomato—all nestled between perfectly toasted bread. A deliciously satisfying meal with bold flavors!


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/4 cup mayonnaise
  • 2 tablespoons Romesco sauce
  • 4 slices of bread
  • Lettuce and tomato for topping

Instructions

  • Preheat the oven to 400°F (200°C).
  • In a shallow dish, mix panko breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper.
  • Coat each chicken breast in the breadcrumb mixture and place on a baking sheet.
  • Bake in the preheated oven for 20-25 minutes or until chicken is cooked through and crispy.
  • In a small bowl, mix mayonnaise and Romesco sauce.
  • Toast the bread slices.
  • Spread the Romesco mayonnaise on each slice of bread.
  • Place a crispy chicken breast on each slice.
  • Top with lettuce, tomato, and the remaining bread slice.
  • Serve and enjoy!

Notes

  • For an extra crispy chicken, you can pan-fry the breaded chicken in some oil before baking.
  • If you prefer a spicier kick, add a dash of hot sauce to the Romesco mayonnaise mixture.
