- 2 boneless, skinless chicken breasts
- 1 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1/4 cup mayonnaise
- 2 tablespoons Romesco sauce
- 4 slices of bread
- Lettuce and tomato for topping
Instructions
- Preheat the oven to 400°F (200°C).
- In a shallow dish, mix panko breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper.
- Coat each chicken breast in the breadcrumb mixture and place on a baking sheet.
- Bake in the preheated oven for 20-25 minutes or until chicken is cooked through and crispy.
- In a small bowl, mix mayonnaise and Romesco sauce.
- Toast the bread slices.
- Spread the Romesco mayonnaise on each slice of bread.
- Place a crispy chicken breast on each slice.
- Top with lettuce, tomato, and the remaining bread slice.
- Serve and enjoy!

- For an extra crispy chicken, you can pan-fry the breaded chicken in some oil before baking.
- If you prefer a spicier kick, add a dash of hot sauce to the Romesco mayonnaise mixture.
