  • For the Fish Fingers:
    • 1 lb white fish fillets (cod or haddock), cut into strips
    • 1 cup all-purpose flour
    • 2 large eggs, beaten
    • 1 cup breadcrumbs (panko or regular)
    • 1/2 cup grated Parmesan cheese
    • 1 teaspoon paprika
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon onion powder
    • Salt and pepper, to taste
    • Vegetable oil, for frying
  • For the Golden Fries:
    • 4 large russet potatoes, peeled and cut into fries
    • 2 tablespoons vegetable oil
    • 1 teaspoon paprika
    • 1/2 teaspoon garlic powder
    • Salt and pepper, to taste

Instructions

  • Prepare the Fish Fingers:
    • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
    • Set up a breading station: Place flour in one dish, beaten eggs in another, and a mix of breadcrumbs, Parmesan cheese, paprika, garlic powder, onion powder, salt, and pepper in a third.
    • Dredge each fish strip in flour, dip in eggs, then coat with the breadcrumb mixture. Arrange on the baking sheet.
  • Fry the Fish Fingers:
    • Heat a thin layer of vegetable oil in a skillet over medium heat. Fry the fish fingers in batches until golden brown and crispy, about 2-3 minutes per side.
    • Transfer back to the baking sheet and bake in the preheated oven for 5-7 minutes, or until cooked through.
  • Make the Golden Fries:
    • Soak cut potatoes in a bowl of cold water for at least 30 minutes to remove excess starch. Drain and pat dry.
    • Toss potatoes with vegetable oil, paprika, garlic powder, salt, and pepper. Spread in a single layer on a baking sheet.
    • Bake in the oven at 400°F (200°C) for 25-30 minutes, flipping halfway, until golden and crispy.
  • Serve:
    • Arrange crispy fish fingers and golden fries on a serving platter. Serve with dipping sauces like tartar sauce or ketchup.

Notes

For extra crunch, double-dip the fish fingers in egg and breadcrumb mixture. Serve fries immediately for maximum crispiness.
