2 large English cucumbers, sliced about 1/3 inch thick

Instructions

Slice the cucumbers into 1/3 inch thick rounds. Sprinkle with salt and let sit for about 10-15 minutes to release excess water.

In a small bowl, combine the soy sauce, rice vinegar, peanut butter, honey, garlic, red chili flakes, and black pepper. Stir until smooth and fully combined.

After the cucumbers have rested, gently pat them dry with a paper towel to remove excess moisture.
