Instructions
- Melt the butter and chocolate: In a microwave or double boiler, melt the butter and chopped semi-sweet chocolate together. Cool slightly.
- Mix the wet ingredients: Beat the eggs, granulated sugar, and vanilla extract until thick and pale. Stir in the cooled chocolate mixture.
- Prepare the dough: Fold in the all-purpose flour, baking powder, and salt. Chill the dough for 30 minutes to firm up.
- Make the peanut butter filling: In a separate bowl, mix together creamy peanut butter and powdered sugar until smooth. Roll into small balls (about 1 tsp each).
- Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Form the cookies: Scoop 1 tbsp of chilled dough, flatten slightly, and wrap it around a peanut butter ball. Roll into a ball and place on the baking sheet.
