    • 1/2 cup granulated sugar
    • 1/2 cup vegetable oil
    • 2 eggs
    • 1 cup grated carrots
  • For the Cream Cheese Frosting:
    • 8 oz cream cheese, softened
    • 1/2 cup powdered sugar
    • 1 tsp vanilla extract

Instructions

  • Preheat the oven to 350°F. Grease an 8×8-inch baking dish.
  • In a bowl, mix the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • In another bowl, whisk together the brown sugar, granulated sugar, vegetable oil, and eggs. Stir in the grated carrots.
  • Gradually add the dry ingredients to the wet mixture and pour into the prepared baking dish.
  • Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let cool before frosting.
  • In a bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth. Spread over the cooled bars.
