- 1 cup all-purpose flour
- 1/2 tsp baking powder

- 1/2 tsp cinnamon

- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup vegetable oil
- 2 eggs
- 1 cup grated carrots
- For the Cream Cheese Frosting:
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F. Grease an 8×8-inch baking dish.
- In a bowl, mix the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, whisk together the brown sugar, granulated sugar, vegetable oil, and eggs. Stir in the grated carrots.
- Gradually add the dry ingredients to the wet mixture and pour into the prepared baking dish.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let cool before frosting.
- In a bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth. Spread over the cooled bars.
