- 1 1/2 cups crushed chocolate wafer cookies
- 1/4 cup unsalted butter, melted
- 8 oz semi-sweet chocolate, melted
- 8 oz milk chocolate, melted
- 8 oz white chocolate, melted
- 3 cups heavy cream, divided
- 1 tbsp sugar
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Mix the crushed chocolate wafer cookies with melted butter and press into the bottom of a springform pan.
- Bake the crust for 8-10 minutes and allow it to cool completely.
- Whip 1 cup of heavy cream until soft peaks form, adding sugar and vanilla extract.
- Fold in the melted semi-sweet chocolate until well incorporated. Spread the chocolate mousse over the cooled crust. Refrigerate for 30 minutes.
- Repeat the same steps with the milk chocolate and white chocolate, layering each mousse and chilling in between.
- Chill the torte for at least 4 hours before serving. Garnish with chocolate shavings if desired.
