For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/3 cup granulated sugar
- 1/2 cup unsalted butter, melted
For the Cheesecake Mousse:
- 16 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- Zest of 1 lemon
- 1/4 cup fresh lemon juice
- 1 cup diced fresh strawberries
- 1 cup whipped cream or whipped topping
Instructions
- Combine graham cracker crumbs, granulated sugar, and melted butter in a bowl. Press mixture into the bottom of a 9-inch springform pan.
- Beat softened cream cheese in a large bowl until smooth. Add powdered sugar, vanilla extract, lemon zest, and lemon juice; mix until smooth.
- Gently fold in diced strawberries and whipped cream until fully incorporated.
- Spoon the cheesecake mousse mixture over the crust, spreading evenly.
- Refrigerate for at least 4 hours until set.
- Before serving, garnish with additional strawberries and lemon zest if desired.
