Description

  • For the Sloppy Joes:

    • 8 oz (225g) rice noodles (or lo mein/udon noodles)

    • 1 lb (450g) beef sirloin or flank steak, thinly sliced

    • 2 tbsp cornstarch

    • 3 tbsp vegetable oil, divided

    • 1 red bell pepper, thinly sliced

    • 2 cups (120g) broccoli florets

    • 3 green onions, sliced (plus extra for garnish)

    • 2 garlic cloves, minced

    • 1 tbsp fresh ginger, grated

  • For the Sticky Sauce:

    • 1/4 cup (60ml) soy sauce

    • 2 tbsp hoisin sauce

    • 2 tbsp honey or brown sugar

    • 2 tbsp rice vinegar (or lime juice)

    • 1 tbsp sesame oil

    • 1/4 tsp red pepper flakes (optional, for heat)


Instructions

  • Prepare the noodles: Cook rice noodles (or other noodles) according to package instructions. Drain and set aside.

  • Cook the beef: Toss the thinly sliced beef with cornstarch. Heat 1 tbsp of vegetable oil in a large skillet over medium-high heat. Add the beef and cook for 2-3 minutes until browned, then remove from the skillet and set aside.

  • Stir-fry the vegetables: In the same skillet, add another tablespoon of oil. Add the sliced bell pepper, broccoli florets, green onions, garlic, and ginger. Stir-fry for 2-3 minutes until the vegetables are tender-crisp.

  • Prepare the sticky sauce: In a small bowl, combine the soy sauce, hoisin sauce, honey (or brown sugar), rice vinegar (or lime juice), sesame oil, and red pepper flakes (if using). Stir until the ingredients are well combined.

  • Combine the beef and sauce: Add the cooked beef back into the skillet with the vegetables. Pour the sticky sauce over the mixture and stir well to coat. Let the sauce simmer for 2-3 minutes until it thickens and the beef is fully coated.

  • Assemble the dish: Toss the cooked noodles into the skillet, stirring everything together until the noodles are well-coated with the sauce and vegetables.

 

  • Serve: Garnish with additional sliced green onions and serve immediately.

Notes

  • For a vegetarian option, you can substitute the beef with tofu or tempeh.

  • If you prefer extra heat, increase the amount of red pepper flakes or add a dash of chili oil to the sauce.
