- 1 cup blueberries
- 2 tbsp balsamic vinegar
- 1/4 cup sugar
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 1 can refrigerated biscuit dough
- Oil for frying
Instructions
- In a small saucepan, combine the blueberries, balsamic vinegar, and sugar. Cook over low heat until the blueberries burst and the mixture thickens. Remove from heat and let cool.
- In a medium bowl, mix together the cream cheese, powdered sugar, and vanilla extract until smooth.
- Roll out the biscuit dough on a floured surface and cut into rounds using a biscuit cutter.
- Place a spoonful of the cream cheese mixture onto half of the rounds, then top with a spoonful of the blueberry mixture. Place another round of dough on top and crimp the edges to seal.
- Heat oil in a large skillet over medium heat. Fry the doughnuts in batches until golden brown on both sides. Drain on paper towels.
- Serve the doughnuts warm and enjoy!
