- 1 cup powdered sugar
- 1 lb fresh strawberries, sliced
Instructions
- In a medium bowl, mix together the graham cracker crumbs, 1/4 cup granulated sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust. Chill the crust in the refrigerator while you prepare the filling.
- In a large bowl, beat the cream cheese, 1/2 cup sugar, and vanilla extract until smooth and creamy.
- In a separate bowl, whip the heavy cream and powdered sugar together until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until fully combined.
- Pour half of the cream cheese mixture over the chilled graham cracker crust. Top with sliced strawberries, then pour the remaining cream cheese mixture over the strawberries.
- Chill the cheesecake in the refrigerator for at least 4 hours, or until set.
