Ingredients

  • 2 cups milk (I use 2%)
  • 4 large eggs
  • 3 Tablespoons unsalted butter, melted
  • 3 Tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon Kosher salt
  • 1 ½ cups all-purpose flour (sifted, if desired)
  • ¼ cup unsweetened cocoa powder
    Optional toppings:
  • Whipped cream
  • Nutella
  • Jam
  • Fresh berries
  • Bananas
  • Nuts

Instructions

  • In a medium bowl, whisk together the eggs, milk, melted butter, sugar, vanilla extract, and salt.
  • Gradually add the sifted flour and cocoa powder, whisking to combine until smooth. Let the batter rest for 15 minutes.
  • Heat a nonstick skillet or crepe pan over medium heat. Lightly grease with a small amount of butter or oil.
  • Pour ¼ cup of the batter into the pan, swirling to spread it evenly across the surface.
  • Cook for 1-2 minutes until the edges start to lift and the bottom is set. Flip and cook for another 30 seconds to 1 minute.
  • Remove from the pan and repeat with the remaining batter.
  • Serve the crepes warm with your favorite toppings, such as whipped cream, Nutella, jam, fresh berries, or sliced bananas.

Notes

  • Resting the batter allows the gluten to relax, resulting in more tender crepes.
  • For an extra indulgent treat, drizzle Nutella or chocolate syrup over the crepes before serving.
