For the Cinnamon Swirl:

  • 6 tablespoons butter (softened)
  • 3/4 cup packed brown sugar
  • 1 1/2 tablespoons cinnamon

For the Cookie Dough:

  • 2 large eggs
  • 1 cup butter (softened)
  • 2 teaspoons vanilla extract
  • 1 2/3 cups granulated sugar
  • 3 1/2 cups all-purpose flour (spooned and leveled)
  • 1 1/2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt

Optional Topping for Cookies:

  • 1/3 cup granulated sugar
  • 1 1/2 tablespoons ground cinnamon

Instructions

  • Make the Cinnamon Swirl:
    • In a small bowl, combine the softened butter, brown sugar, and cinnamon. Mix well until smooth and set aside.
  • Prepare the Cookie Dough:
    • In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy.
    • Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
    • In a separate bowl, whisk together the flour, cream of tartar, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Assemble the Cookies:
    • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
    • Take about 1 tablespoon of dough and roll it into a ball. Flatten the dough ball slightly.
    • Place about 1 teaspoon of the cinnamon swirl mixture in the center of the flattened dough. Fold the dough over the swirl and roll it into a ball again.
    • Place the dough balls on the prepared baking sheet, leaving about 2 inches between each cookie.
  • Optional Topping:
    • If desired, in a small bowl, mix together the granulated sugar and cinnamon for the topping. Sprinkle the mixture over the top of each cookie before baking.
  • Bake the Cookies:
    • Bake for 10-12 minutes, or until the edges of the cookies are golden brown.
    • Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
