- 8 ounces cream cheese, softened
- 2 large chicken breasts
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1/2 medium onion, chopped
- 3 cloves garlic, minced
- 3/4 cup chicken broth
- 1/2 teaspoon Italian seasoning
- 1/4 teaspoon crushed red pepper flakes
- Fresh chopped parsley (optional, for garnish)
Instructions
- Microwave the cream cheese until very soft. Cut it into smaller pieces and set it aside.
- Slice the chicken breasts in half lengthwise to create 4 thinner pieces. Season both sides with garlic powder, salt, and pepper.
- Heat the butter and olive oil in a skillet over medium-high heat. Once the pan is hot, add the chicken and cook for 5-6 minutes per side, or until golden and fully cooked (internal temperature of 165°F). Remove the chicken from the skillet and set it aside on a plate.
- Reduce the heat to medium, then add the chopped onion to the skillet. Sauté for 5-7 minutes, or until softened and lightly browned.
- Stir in the minced garlic and cook for an additional 30 seconds.
- Add the chicken broth, cream cheese, Italian seasoning, and crushed red pepper flakes. Stir until the sauce is smooth, which may take a few minutes.
- Return the cooked chicken to the skillet and warm through. If the sauce is too thick, add a splash more chicken broth to reach your desired consistency.
- Taste and adjust seasoning with extra salt and pepper, if needed. Sprinkle with fresh parsley, if desired, and serve immediately.
