Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 pound baby carrots
  • 1 pound potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup soy sauce
  • 1 tablespoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  • In a large crockpot, place the chicken breasts at the bottom.
  • Add the carrots, potatoes, onion, and garlic on top of the chicken.
  • In a small bowl, mix together the chicken broth, soy sauce, thyme, rosemary, salt, and pepper. Pour the mixture over the chicken and vegetables.
  • Drizzle olive oil over the top.
  • Cover and cook on low for 6-8 hours, or until the chicken is tender and cooked through, and the vegetables are soft.
