Description

These Easy Gluten-Free Chicken Taquitos are a quick and delicious option for a snack, lunch, or dinner. With a flavorful chicken filling wrapped in soft cassava flour tortillas, they’re perfect for those following a gluten-free diet. Crispy on the outside and tender on the inside, these taquitos are sure to become a family favorite.

  • 8 cassava flour tortillas (Siete Foods and Rise & Puff are great options)

Filling Ingredients:

  • 2 cups shredded chicken

  • ½ cup diced bell pepper

  • ⅓ cup diced red onion

  • ¼ cup mayo (Primal Kitchen avocado oil mayo is recommended)

  • 3 tablespoons lime juice (freshly squeezed)

  • 2 tablespoons chopped cilantro

  • 1 teaspoon chili powder

  • ½ teaspoon garlic powder

  • ½ teaspoon salt


Instructions

  • Prepare the Filling: In a large bowl, combine the shredded chicken, diced bell pepper, diced red onion, mayo, lime juice, cilantro, chili powder, garlic powder, and salt. Stir until all ingredients are well mixed.

  • Fill the Tortillas: Lay out the cassava flour tortillas on a flat surface. Spoon about 2-3 tablespoons of the chicken mixture onto each tortilla. Spread it evenly across the middle of the tortilla.

  • Roll the Taquitos: Carefully roll each tortilla around the filling, making sure to keep the ends tucked in.

  • Cook the Taquitos: Heat a non-stick skillet over medium heat. Lightly grease the pan with cooking spray or a small amount of oil. Place the taquitos seam-side down in the skillet and cook for 2-3 minutes per side, until they are golden and crispy.

 

  • Serve: Serve immediately with your favorite dipping sauce, such as guacamole, salsa, or sour cream.

Notes

  • If you prefer baked taquitos, preheat the oven to 400°F (200°C) and bake for 15-20 minutes, flipping halfway through, until crispy and golden.

  • You can make the filling ahead of time and refrigerate it for a couple of days before assembling and cooking.
