Ingredients
For the Chicken:

4 boneless skinless chicken breasts (8 ounces each, 32 ounces total)

½ teaspoon Diamond Crystal kosher salt (or ¼ teaspoon Morton kosher salt)

For the Sauce:

¼ cup mayonnaise (⅓ cup for a creamier casserole)

¼ cup sour cream (⅓ cup for a creamier casserole)

1 tablespoon Dijon mustard

1 tablespoon fresh garlic (minced)

½ teaspoon Diamond Crystal kosher salt (or ¼ teaspoon Morton kosher salt)

¼ teaspoon black pepper

½ teaspoon dried thyme

½ teaspoon paprika

¼ teaspoon cayenne pepper

1 cup sharp cheddar (shredded, divided)
For the Topping (Optional):

¼ cup scallions (sliced, green parts only)

¼ cup bacon bits (room temperature)
Instructions

Preheat the oven to 375°F (190°C).

Lightly coat the chicken breasts with avocado oil spray and season both sides with salt and pepper.

In a skillet, sear the chicken breasts over medium-high heat for 2-3 minutes per side until lightly browned. Remove from heat.

In a medium bowl, combine the mayonnaise, sour cream, Dijon mustard, minced garlic, thyme, paprika, cayenne pepper, and salt and pepper.

Spread half of the shredded cheddar cheese on the bottom of a baking dish. Place the seared chicken breasts on top.

Pour the sauce mixture over the chicken, ensuring it’s evenly coated.

Sprinkle the remaining cheddar cheese on top of the casserole.
