Instructions

  1. Prepare Noodles and Ingredients: Cook the lo mein noodles according to package instructions until tender but still chewy. Drain and toss with a small amount of neutral oil to prevent sticking. Thinly slice the pork, mince garlic and ginger, and chop the carrots, bell peppers, and green onions.
  2. Cook the Pork: Heat a wok or large pan over medium-high heat, add the cooking oil, and stir-fry the pork slices until browned and cooked through. Remove the pork from the pan and set aside to keep it juicy and tender.
  3. Scramble the Eggs: In the same pan, pour in the beaten eggs and scramble gently until fluffy but still moist. Remove from the pan and set aside with the pork.
  4. Stir-Fry Vegetables and Aromatics: Add more oil to the pan if needed. Toss in minced garlic and ginger, cooking just until fragrant. Add sliced carrots, bell peppers, and green onions and stir-fry until tender-crisp and vibrant.
  5. Combine Everything: Return the cooked pork and scrambled eggs to the pan along with the noodles. Pour in soy sauce, oyster sauce, and a splash of sesame oil. Toss everything together quickly over high heat so the noodles absorb the sauce and all ingredients blend evenly.
