Ingredients
Scale
Noodles
- 8 oz fresh or dried lo mein egg noodles
Protein
- 8 oz pork shoulder or tenderloin, thinly sliced
- 3 large eggs, lightly beaten
Sauces & Oils
- 3 tbsp soy sauce
- 2 tbsp oyster sauce
- 1 tsp sesame oil
- 2 tbsp neutral cooking oil (vegetable or canola oil)
Vegetables & Aromatics
- 2 cloves garlic, minced
- 1 tsp fresh ginger, minced
- 1 medium carrot, thinly sliced
- 1 bell pepper, thinly sliced
- 3 green onions, sliced
Instructions
- Prepare Noodles and Ingredients: Cook the lo mein noodles according to package instructions until tender but still chewy. Drain and toss with a small amount of neutral oil to prevent sticking. Thinly slice the pork, mince garlic and ginger, and chop the carrots, bell peppers, and green onions.
- Cook the Pork: Heat a wok or large pan over medium-high heat, add the cooking oil, and stir-fry the pork slices until browned and cooked through. Remove the pork from the pan and set aside to keep it juicy and tender.
- Scramble the Eggs: In the same pan, pour in the beaten eggs and scramble gently until fluffy but still moist. Remove from the pan and set aside with the pork.
- Stir-Fry Vegetables and Aromatics: Add more oil to the pan if needed. Toss in minced garlic and ginger, cooking just until fragrant. Add sliced carrots, bell peppers, and green onions and stir-fry until tender-crisp and vibrant.
- Combine Everything: Return the cooked pork and scrambled eggs to the pan along with the noodles. Pour in soy sauce, oyster sauce, and a splash of sesame oil. Toss everything together quickly over high heat so the noodles absorb the sauce and all ingredients blend evenly.
- Serve Hot: Once mixed and heated through, serve the Egg and Pork Lo Mein immediately to enjoy its freshest, most flavorful state.
Notes
- Use high heat for quick cooking and a slightly charred flavor.
- Do not overcook noodles; they should be slightly undercooked to avoid mushiness after stir-frying.
- Slice pork thinly for fast, tender cooking.
- Add sauce gradually to control seasoning perfectly.
- Let cooked pork rest briefly to retain juices.
- Garnish with sliced green onions, toasted sesame seeds, or fresh cilantro.
- Store leftovers in an airtight container refrigerated up to 3 days; best enjoyed fresh.
- Reheat leftovers in a hot skillet with a splash of water or oil to revive texture.
