Description

This Egg Roll Stir Fry is a quick and healthy dish that brings all the flavors of an egg roll without the frying. Ground meat is sautéed with fresh vegetables like cabbage, carrots, and green onions, all tossed in a savory soy and sesame sauce. It’s an easy, low-carb dinner packed with flavor.

Ingredients

Scale
  • 1 pound ground meat (chicken, turkey, or pork)
  • 2 tablespoons vegetable oil
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 1 teaspoon grated ginger
  • 1 medium head of green cabbage, thinly sliced
  • 2 medium carrots, shredded
  • 1/4 cup soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon rice vinegar
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 2 green onions, sliced (for garnish)
  • Optional: sesame seeds, for garnish

Instructions

  • In a large skillet or wok, heat vegetable oil over medium-high heat. Add the ground meat and cook until browned, breaking it up with a spoon, about 5-7 minutes.
  • Add the chopped onion, garlic, and grated ginger to the skillet. Sauté for about 2-3 minutes until the onion softens.
  • Add the shredded carrots and sliced cabbage to the skillet. Stir-fry for about 5-7 minutes, until the cabbage wilts and the carrots soften.
  • In a small bowl, whisk together the soy sauce, sesame oil, and rice vinegar. Pour this mixture over the meat and vegetables in the skillet, stirring to combine. Cook for an additional 2-3 minutes.
  • If desired, sprinkle crushed red pepper flakes for a bit of heat.
  • Garnish with sliced green onions and sesame seeds before serving.

Notes

  • This dish is easily customizable. Feel free to add other vegetables like bell peppers or mushrooms.
  • For a gluten-free option, use tamari instead of soy sauce.
