For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Cheesecake Filling:

  • 24 oz (680g) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream

For the Raspberry Swirl:

  • 1 cup fresh raspberries
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch mixed with 1 tablespoon cold water

Instructions

  • Preheat oven to 325°F (160°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  • For the Crust:
    • In a bowl, mix together graham cracker crumbs, granulated sugar, and melted butter until combined.
    • Press mixture evenly into the bottom of the prepared baking pan. Set aside.
  • For the Cheesecake Filling:
    • In a large bowl, beat cream cheese and granulated sugar until smooth.
    • Add eggs, one at a time, mixing well after each addition.
    • Stir in vanilla extract and sour cream until well combined.
  • Pour the cheesecake filling over the prepared crust in the baking pan, spreading it evenly.
  • For the Raspberry Swirl:
    • In a small saucepan, combine raspberries, granulated sugar, and lemon juice. Cook over medium heat until raspberries break down and release their juices.
    • Stir in the cornstarch mixture and cook until the mixture thickens, stirring constantly. Remove from heat and let cool slightly.
  • Drop spoonfuls of the raspberry mixture over the cheesecake filling.
  • Use a knife or toothpick to swirl the raspberry mixture into the cheesecake filling to create a marbled effect.
  • Bake for 40-45 minutes, or until the edges are set and the center is slightly jiggly.
  • Allow the cheesecake bars to cool in the pan on a wire rack for 1 hour.
  • Refrigerate the bars for at least 4 hours, or overnight, until completely chilled and set.
  • Using the parchment paper overhang, lift the cheesecake bars out of the pan and onto a cutting board. Cut into bars.
