For the Beef:

  • 1 lb ground beef
  • 1 packet taco seasoning mix
  • 2/3 cup water

For the Nachos:

  • 1 large bag tortilla chips
  • 1 can (15 oz) refried beans, warmed
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced black olives
  • 1/4 cup sliced jalapeños (optional)
  • 1/4 cup chopped green onions
  • 1/2 cup sour cream
  • 1/2 cup salsa or pico de gallo
  • 1/4 cup guacamole

Instructions

  • Preheat the Oven: Preheat your oven to 400°F (200°C).
  • Cook the Ground Beef:
    • In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
    • Add the taco seasoning mix and water to the skillet. Stir to combine and let it simmer for 5-7 minutes, or until the mixture thickens.
  • Assemble the Nachos:
    • Spread a layer of tortilla chips evenly on a large baking sheet or oven-safe platter.
    • Spoon the warmed refried beans over the chips.
    • Add the seasoned ground beef on top of the beans.
    • Sprinkle the shredded cheddar and Monterey Jack cheeses evenly over the beef.
  • Bake:
    • Place the assembled nachos in the preheated oven and bake for about 10-12 minutes, or until the cheese is melted and bubbly.
  • Add Fresh Toppings:
    • Remove the nachos from the oven and immediately top with shredded lettuce, diced tomatoes, sliced black olives, sliced jalapeños (if using), and chopped green onions.
  • Garnish and Serve:
    • Dollop sour cream, salsa or pico de gallo, and guacamole over the top of the nachos.
    • Serve immediately while hot and enjoy!
