For the Fish Fingers:

  • 1 pound (450g) white fish fillets (such as cod or haddock), cut into finger-sized strips
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Vegetable oil, for frying

For the Peri Peri Fries:

  • 4 large potatoes, peeled and cut into fries
  • 2 tablespoons olive oil
  • 1 tablespoon peri peri seasoning (store-bought or homemade)
  • 1/2 teaspoon garlic powder
  • Salt, to taste

For the Beans:

  • 1 can (15 oz) baked beans
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme

Instructions

1️⃣ Prepare the Peri Peri Fries:

  • Preheat your oven to 425°F (220°C).
  • In a large bowl, toss the potato fries with olive oil, peri peri seasoning, garlic powder, and salt until evenly coated.
  • Spread the fries out on a baking sheet in a single layer.
  • Bake in the preheated oven for 25-30 minutes, or until golden and crispy, flipping halfway through.

2️⃣ Prepare the Fish Fingers:

  • Set up a breading station: Place the flour in one bowl, the beaten eggs in another, and combine the panko breadcrumbs, paprika, garlic powder, salt, and pepper in a third bowl.
  • Dip each fish strip first into the flour, then into the beaten eggs, and finally into the breadcrumb mixture, pressing gently to adhere.
  • Heat vegetable oil in a large skillet over medium heat. Fry the fish fingers in batches for 2-3 minutes per side, or until golden brown and cooked through. Remove and drain on paper towels.

3️⃣ Heat the Beans:

  • In a small saucepan, heat the baked beans over medium heat.
  • Stir in the black pepper and dried thyme. Simmer for 5-7 minutes, or until heated through.

4️⃣ Serve:

  • Arrange the fish fingers, peri peri fries, and beans on plates. Enjoy with your favorite dipping sauces or a squeeze of lemon for extra flavor!
