This Forgotten Chicken recipe is a set-it-and-forget-it dish that combines tender chicken breasts with creamy soups and flavorful seasonings. Perfect for busy nights, it’s served over rice or pasta for a comforting meal.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup chicken broth
  • 1 packet (1 oz) dry onion soup mix
  • 1/2 cup sour cream (optional)
  • 1/4 cup melted butter (optional)
  • Salt and pepper to taste
  • Cooked rice or pasta, for serving

Instructions

  • Prepare the Sauce:
    In a bowl, mix together the cream of chicken soup, cream of mushroom soup, chicken broth, and onion soup mix. Stir until well combined.
  • Prepare the Chicken:
    Season the chicken breasts with salt and pepper. Place them in the slow cooker.
  • Add Sauce:
    Pour the soup mixture over the chicken breasts. If using, drizzle melted butter over the top for added richness.
  • Cook:
    Cover and cook on low for 6-8 hours, or until the chicken is tender and cooked through.
  • Optional Step:
    Stir in sour cream just before serving for extra creaminess, if desired.
  • Serve:
    Serve the chicken and sauce over cooked rice or pasta.

Notes

  • For a lighter version, omit the sour cream and butter.
  • This dish can also be cooked in the oven at 350°F (175°C) for about 1.5 hours, covered.
