French Onion Chicken Rice

Description

Tender chicken served with a rich and flavorful onion rice, infused with savory beef broth and topped with melted Gruyère or mozzarella cheese. A perfect one-pan meal that combines the comforting taste of French onion soup with juicy chicken and rice.

For the Chicken:

  • 1 1/2 lbs boneless, skinless chicken thighs or breasts

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1 teaspoon garlic powder

  • 1 teaspoon dried thyme

  • 1 tablespoon olive oil

For the Onion Rice:

  • 2 tablespoons butter

  • 2 large yellow onions, thinly sliced

  • 1 cup long-grain white rice (or basmati)

  • 2 cups beef broth (or chicken broth)

  • 1 cup water

  • 1 packet (1 oz) dry onion soup mix

  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)

  • 1 cup shredded Gruyère or mozzarella cheese


Instructions

  • Prepare the Chicken:

    • Season the chicken thighs or breasts with salt, pepper, garlic powder, and dried thyme.

    • Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes per side until golden brown and cooked through. Remove from the skillet and set aside.

  • Make the Onion Rice:

    • In the same skillet, melt butter over medium heat. Add the sliced onions and cook for 8-10 minutes, stirring occasionally, until the onions are soft and caramelized.

    • Add the rice to the skillet and stir to combine with the onions. Cook for 1-2 minutes to lightly toast the rice.

  • Add Liquids and Seasonings:

    • Pour in the beef broth, water, dry onion soup mix, and fresh thyme. Stir to combine. Bring to a simmer, then reduce the heat to low. Cover and cook for 18-20 minutes, or until the rice is tender and the liquid is absorbed.

  • Finish the Dish:

    • Once the rice is cooked, place the cooked chicken on top of the rice in the skillet. Sprinkle the shredded Gruyère or mozzarella cheese over the chicken and rice.

    • Cover and cook for an additional 2-3 minutes, or until the cheese is melted and bubbly.

 

  • Serve:

    • Serve the French Onion Chicken Rice hot, garnished with extra fresh thyme if desired.

Notes

  • You can substitute chicken broth for the beef broth if preferred.

  • If you don’t have Gruyère, mozzarella works perfectly for a creamy melt.

  • For a richer flavor, you can add a splash of white wine to the onions as they caramelize.
