Ingredients
For the Chicken:

1 1/2 lbs boneless, skinless chicken thighs or breasts

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon dried thyme

1 tablespoon olive oil
For the Onion Rice:

2 tablespoons butter

2 large yellow onions, thinly sliced

1 cup long-grain white rice (or basmati)

2 cups beef broth (or chicken broth)

1 cup water

1 packet (1 oz) dry onion soup mix

1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)

1 cup shredded Gruyère or mozzarella cheese
Instructions

Prepare the Chicken:

Season the chicken thighs or breasts with salt, pepper, garlic powder, and dried thyme.

Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes per side until golden brown and cooked through. Remove from the skillet and set aside.

Make the Onion Rice:

In the same skillet, melt butter over medium heat. Add the sliced onions and cook for 8-10 minutes, stirring occasionally, until the onions are soft and caramelized.

Add the rice to the skillet and stir to combine with the onions. Cook for 1-2 minutes to lightly toast the rice.

Add Liquids and Seasonings:

Pour in the beef broth, water, dry onion soup mix, and fresh thyme. Stir to combine. Bring to a simmer, then reduce the heat to low. Cover and cook for 18-20 minutes, or until the rice is tender and the liquid is absorbed.

Once the rice is cooked, place the cooked chicken on top of the rice in the skillet. Sprinkle the shredded Gruyère or mozzarella cheese over the chicken and rice.
