Ingredients

  • 2 lbs baby potatoes
  • 2 tbsp olive oil
  • 1 large onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tsp thyme
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese

Instructions

  • Preheat the oven to 400°F (200°C).
  • Boil the baby potatoes in a pot of salted water until fork-tender, about 15 minutes. Drain and let them cool slightly.
  • In a large skillet, heat olive oil over medium heat. Add the thinly sliced onion and cook, stirring occasionally, until the onions are caramelized and golden brown, about 15-20 minutes.
  • Add minced garlic and thyme to the skillet with the onions, cooking for an additional 2 minutes until fragrant.
  • Once the potatoes are slightly cooled, place them on a baking sheet. Use a fork to gently smash each potato, flattening them slightly.
  • Spoon the caramelized onion and garlic mixture evenly over each smashed potato.
  • Sprinkle Parmesan cheese over the top, then season with salt and pepper.
  • Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly, and the edges of the potatoes are crispy.
  • Serve hot and enjoy!

Notes

  • You can substitute the Parmesan with other cheeses, like cheddar or Gruyère, for a different flavor.
  • For a crispy topping, broil for the last 2 minutes of baking.
