Instructions

  2. Make the Dressing: In a mixing bowl, combine mayonnaise, sour cream, fresh lime juice, salt, and pepper. Whisk well until smooth and creamy.
  3. Mix Ingredients Together: Add the corn, diced red bell pepper, green onions, chopped cilantro, and shredded cheddar cheese to the bowl with dressing. Gently fold them together until well coated.
  4. Add Fritos Last: Just before serving, lightly crush the Fritos and fold them into the salad to preserve their crunch and prevent sogginess.
