Description

Frozen Yogurt Berry Bark is a delightful, refreshing, and nutritious frozen treat combining creamy Greek yogurt with vibrant mixed berries. This colorful and crunchy snack is easy to prepare, healthy, and customizable, perfect for a quick breakfast, dessert, or energizing snack that offers a guilt-free indulgence loaded with protein and antioxidants.

Ingredients

Scale

Base

  • 2 cups Greek yogurt (plain or vanilla)
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract

Toppings

  • 1/2 cup mixed berries (fresh or frozen blueberries, strawberries, raspberries)
  • 1 tablespoon chia seeds (optional)
  • Optional additions: chopped nuts (almonds, walnuts, pistachios), coconut flakes, melted dark chocolate drizzle, cinnamon or nutmeg

Instructions

  1. Prepare the Yogurt Mixture: In a bowl, mix the Greek yogurt with honey and vanilla extract until smooth and creamy. Adjust sweetness to taste, bearing in mind the freezing process will slightly dull the sweetness.
  2. Line Your Tray: Line a baking sheet or shallow tray with parchment paper to prevent sticking and make it easier to break the bark once frozen.
  3. Spread the Yogurt: Pour the yogurt mixture onto the lined tray and spread evenly to about 1/4-inch thickness for uniform freezing and texture.
  4. Scatter the Berries and Seeds: Evenly distribute mixed berries over the yogurt, pressing them gently into the surface. Sprinkle chia seeds or optional nuts and toppings on top for added crunch and flavor.
  5. Freeze Until Firm: Place the tray in the freezer for at least 4-5 hours or ideally overnight until the yogurt is fully frozen and firm.
  6. Break Into Pieces and Serve: Once solid, lift the bark off the parchment and break it into chunks using your hands or a knife. Serve immediately or store for later.

Notes

  • Use thick Greek or strained yogurt to prevent icy texture and retain creaminess.
  • If using fresh berries, pat them dry to avoid excess moisture diluting the yogurt.
  • Spread yogurt evenly to ensure consistent freezing and easy breakability.
  • Keep freezer at its coldest for firmer texture and less iciness.
  • Store the bark in an airtight container or freezer bag to prevent freezer burn and odor absorption.
