Indulge in this delightful Fruit Salad Cheesecake, featuring a creamy filling atop a buttery graham cracker crust, beautifully topped with fresh mixed fruits. Perfect for a refreshing dessert!


Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 3 large eggs
  • 1 cup whipped cream
  • 1 cup mixed fruit (berries, kiwi, pineapple, grapes, etc.)
  • 1 tbsp honey (optional, for drizzling)

Instructions

  • Preheat oven to 325°F (160°C). Grease a 9-inch springform pan.
  • In a medium bowl, mix graham cracker crumbs with melted butter. Press the mixture into the bottom of the prepared pan.
  • In a large bowl, beat cream cheese and sugar until smooth. Add vanilla and sour cream, mixing well.
  • Beat in the eggs, one at a time, until just combined. Pour the mixture over the crust.
  • Bake for 45-50 minutes, or until the center is almost set. Remove from oven and let cool completely.
  • Top the cheesecake with whipped cream and fresh mixed fruit. Drizzle with honey, if desired, before serving.

Notes

For extra flavor, you can use a variety of seasonal fruits!
