- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 3 packages (8 oz each) cream cheese, softened
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 3 large eggs
- 1 cup whipped cream
- 1 cup mixed fruit (berries, kiwi, pineapple, grapes, etc.)
- 1 tbsp honey (optional, for drizzling)
Instructions
- Preheat oven to 325°F (160°C). Grease a 9-inch springform pan.
- In a medium bowl, mix graham cracker crumbs with melted butter. Press the mixture into the bottom of the prepared pan.
- In a large bowl, beat cream cheese and sugar until smooth. Add vanilla and sour cream, mixing well.
- Beat in the eggs, one at a time, until just combined. Pour the mixture over the crust.
- Bake for 45-50 minutes, or until the center is almost set. Remove from oven and let cool completely.
- Top the cheesecake with whipped cream and fresh mixed fruit. Drizzle with honey, if desired, before serving.
