Simple yet flavorful, these garlic butter noodles come together quickly with tender pasta tossed in a rich, garlicky butter sauce and finished with freshly grated Parmesan and fresh parsley. Perfect as a side or a quick main.
Ingredients
-
12 ounces linguine or other long, slender dried pasta
-
3 tablespoons butter
-
2 tablespoons olive oil
-
5 large garlic cloves, minced
-
Kosher salt, to taste
-
Freshly ground black pepper, to taste
-
2 ounces freshly grated Parmesan cheese
-
1 tablespoon chopped fresh parsley, plus more for garnish
Instructions
-
Cook pasta: Bring a large pot of salted water to a boil. Add linguine and cook until al dente according to package instructions. Reserve ½ cup pasta water and drain pasta.
-
Make garlic butter sauce: While pasta cooks, heat butter and olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1–2 minutes until fragrant but not browned.
-
Combine: Add cooked pasta to the skillet, tossing to coat evenly in the garlic butter. If needed, add reserved pasta water a little at a time to loosen the sauce.
-
Season & finish: Stir in grated Parmesan cheese, chopped parsley, salt, and pepper. Toss well to combine.
- Serve: Plate noodles and garnish with additional parsley and Parmesan if desired.
Notes
-
Use good quality Parmesan for best flavor.
-
Avoid browning garlic to keep it from becoming bitter.
- Pasta water adds silkiness to the sauce—add gradually to reach desired consistency.
