Instructions

  1. Cook the Linguine: Bring a large pot of salted water to a boil and cook the linguine according to the package instructions until al dente. Reserve about 1 cup of pasta water before draining to help loosen the sauce later.
  2. Sauté the Prawns: Heat olive oil in a large skillet over medium-high heat. Add the prawns seasoned lightly with salt and pepper. Cook for 2-3 minutes per side until pink and opaque, then remove and set aside to avoid overcooking.
  3. Make the Garlic Butter Sauce: Reduce heat to medium and add the butter to the skillet. Once melted, stir in the minced garlic and sauté until fragrant but not browned, about 1-2 minutes. Pour in the lemon juice and, if using, add a splash of the reserved pasta water to loosen the sauce.
  4. Combine Pasta and Prawns: Add the cooked linguine back into the skillet with the garlic butter sauce and toss well to coat. Return the prawns to the pan and sprinkle the grated Parmesan and chopped parsley over the top, gently tossing to combine all flavors.
  5. Serve Immediately: Taste and adjust seasoning with salt, pepper, or additional lemon juice as needed. Serve hot, garnished with more parsley or Parmesan if desired.
