- 2 ribeye steaks
- 1 pound baby potatoes, halved
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 teaspoon paprika
- Salt and black pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- In a large skillet, heat olive oil over medium-high heat. Season the steaks with salt, pepper, and paprika.
- Sear the steaks in the skillet for 2-3 minutes per side until browned. Remove from skillet and set aside.
- Add the baby potatoes to the skillet and cook for 5 minutes, stirring occasionally.
- Melt the butter in the skillet, then add the garlic, rosemary, and thyme. Stir until fragrant.
- Return the steaks to the skillet, spooning the garlic butter over them.
- Transfer the skillet to the oven and roast for 15-20 minutes, or until the potatoes are tender and the steaks are cooked to your desired level of doneness.
- Let the steaks rest for 5 minutes before slicing and serving with the potatoes.
