Description

This quick and flavorful Garlic Chicken Fried Rice is a perfect weeknight meal. Packed with tender chicken, scrambled eggs, and colorful veggies, it’s a delicious way to use leftover rice!


Ingredients

Scale
  • 2 cups cooked white rice
  • 1 chicken breast, diced
  • 2 eggs, beaten
  • 3 cloves garlic, minced
  • 1/2 cup frozen peas and carrots
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Green onions, chopped for garnish

Instructions

  • In a large skillet, heat some oil over medium heat.
  • Add the diced chicken and cook until no longer pink.
  • Push the chicken to one side of the skillet and add the beaten eggs to the other side. Scramble the eggs until cooked through.
  • Add minced garlic, frozen peas and carrots, and cooked rice to the skillet. Stir everything together.
  • Pour soy sauce and sesame oil over the rice mixture. Season with salt and pepper.
  • Cook for an additional 2-3 minutes, stirring occasionally.
  • Serve hot, garnished with chopped green onions.

Notes

Feel free to customize with other vegetables or protein like shrimp or tofu. For extra flavor, add a sprinkle of sesame seeds or a dash of sriracha!
