This quick and flavorful Garlic Chicken Fried Rice is a perfect weeknight meal. Packed with tender chicken, scrambled eggs, and colorful veggies, it’s a delicious way to use leftover rice!

- 2 cups cooked white rice
- 1 chicken breast, diced
- 2 eggs, beaten
- 3 cloves garlic, minced
- 1/2 cup frozen peas and carrots
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
- Green onions, chopped for garnish
Instructions
- In a large skillet, heat some oil over medium heat.
- Add the diced chicken and cook until no longer pink.
- Push the chicken to one side of the skillet and add the beaten eggs to the other side. Scramble the eggs until cooked through.
- Add minced garlic, frozen peas and carrots, and cooked rice to the skillet. Stir everything together.
- Pour soy sauce and sesame oil over the rice mixture. Season with salt and pepper.
- Cook for an additional 2-3 minutes, stirring occasionally.
- Serve hot, garnished with chopped green onions.
Notes
Feel free to customize with other vegetables or protein like shrimp or tofu. For extra flavor, add a sprinkle of sesame seeds or a dash of sriracha!
