Description

Garlic Parmesan Chicken Meatloaves are a comforting and flavorful twist on traditional meatloaf. Packed with garlic and Parmesan cheese, these mini loaves are topped with a savory Parmesan and herb crust, making them a delicious and satisfying meal.

For the Meatloaves:

  • 1 1/2 pounds ground chicken
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1 egg
  • 1/4 cup milk
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Topping:

  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon melted butter
  • 1/2 teaspoon garlic powder

Instructions

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  • In a large bowl, combine the ground chicken, 1/2 cup Parmesan cheese, breadcrumbs, parsley, minced garlic, egg, milk, oregano, salt, and black pepper. Mix until just combined.
  • Shape the mixture into 6-8 small loaves and place them on the prepared baking sheet.
  • In a small bowl, mix together the 1/4 cup Parmesan cheese, parsley, melted butter, and garlic powder. Spoon this mixture evenly over the top of each meatloaf.
  • Bake for 25-30 minutes, or until the meatloaves are cooked through and have an internal temperature of 165°F (74°C).
  • Remove from the oven and let rest for a few minutes before serving.

Notes

These meatloaves are perfect served with a side of roasted vegetables or a simple salad. For a little extra flavor, try adding a sprinkle of fresh lemon juice before serving!
