For the Meatloaves:
- 1 1/2 pounds ground chicken
- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs
- 1/4 cup chopped fresh parsley
- 2 cloves garlic, minced
- 1 egg
- 1/4 cup milk
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For the Topping:
- 1/4 cup grated Parmesan cheese
- 1 tablespoon chopped fresh parsley
- 1 tablespoon melted butter
- 1/2 teaspoon garlic powder
Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
- In a large bowl, combine the ground chicken, 1/2 cup Parmesan cheese, breadcrumbs, parsley, minced garlic, egg, milk, oregano, salt, and black pepper. Mix until just combined.
- Shape the mixture into 6-8 small loaves and place them on the prepared baking sheet.
- In a small bowl, mix together the 1/4 cup Parmesan cheese, parsley, melted butter, and garlic powder. Spoon this mixture evenly over the top of each meatloaf.
- Bake for 25-30 minutes, or until the meatloaves are cooked through and have an internal temperature of 165°F (74°C).
- Remove from the oven and let rest for a few minutes before serving.
Notes
These meatloaves are perfect served with a side of roasted vegetables or a simple salad. For a little extra flavor, try adding a sprinkle of fresh lemon juice before serving!
