Description

Ingredients

For the Garlic Parmesan Sauce:

  • 4 tablespoons butter

  • 3 tablespoons grated Parmigiano Reggiano (Parmesan cheese)

  • 4 cloves garlic, chopped

  • 1 pinch red pepper flakes (optional)

  • 1 tablespoon lemon juice

  • 1 tablespoon chopped fresh parsley

For the Grilled Chicken:

  • 1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces

  • 1 teaspoon Cajun seasoning


Instructions

  • Preheat your grill to medium-high heat.

  • In a small saucepan, melt the butter over medium heat.

  • Add the chopped garlic to the melted butter and sauté until fragrant, about 1 minute.

  • Stir in the grated Parmesan cheese, red pepper flakes (if using), lemon juice, and chopped parsley.

  • Continue to cook the sauce, stirring frequently, until the cheese is melted and the sauce is smooth.

  • Remove the saucepan from heat and set aside.

  • In a bowl, toss the chicken pieces with Cajun seasoning until evenly coated.

  • Thread the seasoned chicken pieces onto skewers.

  • Place the skewers on the preheated grill and cook for 5-7 minutes per side, or until the chicken reaches an internal temperature of 165°F (74°C).

  • Once cooked, remove the chicken from the grill and discard the skewers.

  • Place the grilled chicken pieces in a large bowl and pour the prepared garlic Parmesan sauce over them.

  • Toss the chicken in the sauce until evenly coated.

  • Serve immediately, garnished with additional chopped parsley if desired.
