Description

Garlic roast potatoes are a delicious and crispy side dish perfect for any occasion. With garlic, fresh herbs, and a golden, crispy crust, they’re the perfect complement to any meal. Whether served with roasted meats or as part of a vegetarian feast, these potatoes are sure to impress.

Ingredients

  • Potatoes (Yukon Gold, Russet, or baby potatoes)
  • Garlic (fresh cloves, minced or whole)
  • Olive oil
  • Fresh herbs (such as rosemary, thyme, or parsley)
  • Salt and pepper
  • Optional: lemon zest, Parmesan cheese, or chili flakes for added flavor

Instructions

  • Preheat the Oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or a silicone baking mat.
  • Prepare the Potatoes: Wash and peel (optional) the potatoes. Cut them into 1 to 1.5-inch pieces. If using baby potatoes, you can leave them whole or halve them.
  • Season the Potatoes: Toss the potatoes with olive oil, minced garlic, salt, and pepper. If using whole garlic cloves, smash them lightly with a knife and add to the bowl. Add fresh herbs and toss well to coat.
  • Roast the Potatoes: Spread the seasoned potatoes in a single layer on the baking sheet. Roast for 35-40 minutes, flipping halfway through, until golden and crispy on the outside and tender on the inside.
  • Serve: Once roasted, remove from the oven and allow to cool for a few minutes. Serve hot, garnished with extra herbs, Parmesan cheese, or lemon zest if desired.

Notes

  • To achieve extra crispy potatoes, spread them in a single layer without overcrowding.
  • Fresh garlic gives the best flavor, but be careful not to burn it.
  • For a touch of sweetness, drizzle with honey or balsamic glaze after roasting.
