Ingredients

Instructions
- Preheat the Oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or a silicone baking mat.
- Prepare the Potatoes: Wash and peel (optional) the potatoes. Cut them into 1 to 1.5-inch pieces. If using baby potatoes, you can leave them whole or halve them.
- Season the Potatoes: Toss the potatoes with olive oil, minced garlic, salt, and pepper. If using whole garlic cloves, smash them lightly with a knife and add to the bowl. Add fresh herbs and toss well to coat.
- Roast the Potatoes: Spread the seasoned potatoes in a single layer on the baking sheet. Roast for 35-40 minutes, flipping halfway through, until golden and crispy on the outside and tender on the inside.
- Serve: Once roasted, remove from the oven and allow to cool for a few minutes. Serve hot, garnished with extra herbs, Parmesan cheese, or lemon zest if desired.
