Description

Sweet cherry tomatoes roasted to perfection with fragrant garlic and Italian herbs. A vibrant, flavorful side or topping that brings brightness and depth to any dish.


Ingredients

  • 5 cups cherry tomatoes, halved

  • 4 cloves garlic, minced

  • 2 tablespoons olive oil, plus more for storage

  • 2 teaspoons dried Italian seasoning

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 1 teaspoon granulated sugar (optional)


Instructions

  • Preheat oven to 400°F (200°C).

  • In a large bowl, toss cherry tomatoes with minced garlic, olive oil, Italian seasoning, salt, pepper, and sugar if using.

  • Spread tomatoes evenly on a baking sheet lined with parchment paper.

  • Roast for 20–25 minutes, stirring halfway, until tomatoes are softened and slightly caramelized.

  • Remove from oven and allow to cool slightly.

  • Store in a jar or airtight container with a drizzle of olive oil to keep fresh.

  • Serve warm or cold as a side, salad topper, or pasta addition.
