Ingredients

5 cups cherry tomatoes, halved

Instructions

Preheat oven to 400°F (200°C).

In a large bowl, toss cherry tomatoes with minced garlic, olive oil, Italian seasoning, salt, pepper, and sugar if using.

Spread tomatoes evenly on a baking sheet lined with parchment paper.

Roast for 20–25 minutes, stirring halfway, until tomatoes are softened and slightly caramelized.

Remove from oven and allow to cool slightly.

Store in a jar or airtight container with a drizzle of olive oil to keep fresh.
