- 12 oz pasta (spaghetti or linguine)
- 1 lb large shrimp, peeled and deveined
- 4 tablespoons butter
- 3 tablespoons olive oil
- 6 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 cup dry white wine or chicken broth
- 1 lemon, juiced and zested
- 1/4 cup fresh parsley, chopped
- Salt and pepper, to taste
- Grated Parmesan cheese for serving
Instructions
- Cook the Pasta:
Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta. - Sauté the Shrimp:
In a large skillet, heat 2 tablespoons of butter and 2 tablespoons of olive oil over medium-high heat. Add the shrimp, season with salt and pepper, and cook for 2-3 minutes on each side until pink and opaque. Remove the shrimp from the skillet and set aside. - Make the Garlic Sauce:
In the same skillet, add the remaining 2 tablespoons of butter and 1 tablespoon of olive oil. Add the minced garlic and red pepper flakes (if using) and sauté for 1-2 minutes until fragrant. Pour in the white wine or chicken broth and bring to a simmer. Cook for 2-3 minutes until the liquid reduces slightly. - Combine Ingredients:
Return the shrimp to the skillet, along with the cooked pasta. Add the lemon juice, lemon zest, and chopped parsley. Toss everything together until well combined. If the pasta seems dry, add some reserved pasta water a little at a time until you reach the desired consistency. - Serve:
Serve the garlic shrimp pasta hot, topped with grated Parmesan cheese.
