Description

Enjoy the crispy goodness of German Potato Pancakes, or Kartoffelpuffer, made with grated potatoes and onions. These savory delights are perfect for a comforting meal or snack, served with sour cream or applesauce.


Ingredients

  • 4 medium potatoes, peeled and grated
  • 1 small onion, finely grated
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • Salt and pepper to taste
  • Vegetable oil, for frying
  • Sour cream or applesauce for serving

Instructions

  • Grate the potatoes and onion, then place them in a clean kitchen towel or cheesecloth. Squeeze out as much liquid as possible.
  • In a large bowl, combine the grated potatoes and onion with the eggs, flour, salt, and pepper. Mix well until evenly combined.
  • Heat a thin layer of vegetable oil in a large skillet over medium heat. Scoop about 1/4 cup of the potato mixture into the skillet, flattening it into a pancake shape.
  • Fry for 3-4 minutes on each side or until golden brown and crispy. Drain on paper towels to remove excess oil.
  • Serve hot with sour cream or applesauce.

Notes

Ensure to squeeze out excess liquid from the potatoes for crispier pancakes.
