- 4 medium potatoes, peeled and grated
- 1 small onion, finely grated
- 2 large eggs
- 1/4 cup all-purpose flour
- Salt and pepper to taste
- Vegetable oil, for frying
- Sour cream or applesauce for serving
Instructions
- Grate the potatoes and onion, then place them in a clean kitchen towel or cheesecloth. Squeeze out as much liquid as possible.
- In a large bowl, combine the grated potatoes and onion with the eggs, flour, salt, and pepper. Mix well until evenly combined.
- Heat a thin layer of vegetable oil in a large skillet over medium heat. Scoop about 1/4 cup of the potato mixture into the skillet, flattening it into a pancake shape.
- Fry for 3-4 minutes on each side or until golden brown and crispy. Drain on paper towels to remove excess oil.
- Serve hot with sour cream or applesauce.
