For the Cake Layers:

  • 2 cups cake flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk

For the Ice Cream Layers:

  • 1 quart vanilla ice cream, softened
  • 1 quart strawberry ice cream, softened
  • 1 quart chocolate ice cream, softened

For the Frosting:

  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • Food coloring (pink, blue, purple)

For Decoration:

  • Edible glitter
  • Sprinkles
  • Unicorn cake topper

Instructions

  • Preheat oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  • In a medium bowl, sift together cake flour, baking powder, baking soda, and salt.
  • In a large bowl, cream together butter and granulated sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
  • Gradually add the dry ingredients to the butter mixture, alternating with buttermilk, until well combined.
  • Divide the batter evenly among the prepared pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let cakes cool completely.
  • Once cooled, cut each cake layer in half horizontally to create 6 thinner layers.
  • In a 9-inch springform pan, layer the ice creams one by one, smoothing each layer with a spatula. Freeze until firm.
  • Assemble the cake by placing one cake layer on a serving plate. Spread a layer of vanilla ice cream over the cake, then add another cake layer. Repeat with strawberry and chocolate ice cream layers. Finish with the final cake layer on top.
  • In a chilled bowl, whip heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Divide and color the frosting with food coloring as desired.
  • Frost the cake with the colored whipped cream, creating a unicorn horn and ears with additional frosting.
  • Decorate with edible glitter, sprinkles, and a unicorn cake topper.
