- Food coloring (pink, blue, purple)

Instructions
- Preheat oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
- In a medium bowl, sift together cake flour, baking powder, baking soda, and salt.
- In a large bowl, cream together butter and granulated sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
- Gradually add the dry ingredients to the butter mixture, alternating with buttermilk, until well combined.
- Divide the batter evenly among the prepared pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let cakes cool completely.
- Once cooled, cut each cake layer in half horizontally to create 6 thinner layers.
- In a 9-inch springform pan, layer the ice creams one by one, smoothing each layer with a spatula. Freeze until firm.
- Assemble the cake by placing one cake layer on a serving plate. Spread a layer of vanilla ice cream over the cake, then add another cake layer. Repeat with strawberry and chocolate ice cream layers. Finish with the final cake layer on top.
- In a chilled bowl, whip heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Divide and color the frosting with food coloring as desired.
- Frost the cake with the colored whipped cream, creating a unicorn horn and ears with additional frosting.
- Decorate with edible glitter, sprinkles, and a unicorn cake topper.
