Description

Glazed Almond Cookies are a delicious treat featuring a tender, almond-infused crumb and a satisfying crunch from whole almonds. Finished with a glossy, sweet glaze, these cookies offer a perfect balance of flavors and textures. Easy to make and elegant in appearance, they’re ideal for gifting, afternoon tea, or any sweet indulgence.

Ingredients

Scale

Cookie Dough

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 egg white
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • 2 1/2 cups all-purpose flour
  • Whole almonds (about 24), for topping

Glaze

  • 1 cup powdered sugar
  • 23 tablespoons water or milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Prepare the Dough: Beat the softened unsalted butter with granulated sugar until creamy and light. Mix in the egg white, vanilla extract, and almond extract if using. Gradually fold in the all-purpose flour until fully incorporated, resulting in a rich, pliable dough.
  2. Shape the Cookies with Almonds: Roll small portions of dough into 1-inch balls. Gently press a whole almond into the center of each ball and slightly flatten to shape the cookies.
  3. Bake Until Golden: Arrange the cookies on a lined baking sheet, spacing them apart. Bake at 350°F (175°C) for 12-15 minutes or until edges turn golden brown, maintaining chewy centers and crisp edges.
  4. Prepare the Glaze: While cookies bake, whisk powdered sugar with water or milk and vanilla extract until smooth and glossy. The glaze should be thick but spreadable.
  5. Glaze and Cool: When cookies are slightly cooled but still warm, brush or spoon the glaze over each cookie. Place on a wire rack to let the glaze harden into a shiny, sweet shell.

Notes

  • Use room temperature butter for easier mixing and a smoother dough.
  • Chill the dough for 20-30 minutes before baking to maintain shape.
  • Choose fresh, high-quality whole almonds for best flavor and appearance.
  • Apply glaze in thin layers to avoid sticky or runny finish.
  • Remove cookies from oven when edges are golden but centers remain soft to prevent overbaking.
