- 1 cup panko breadcrumbs
- 1/2 cup mayonnaise

- 1/4 cup diced red onion
- 1 egg

Instructions
- Begin by preparing the salmon fillet. Remove the skin and any bones, then chop the salmon into small pieces.
- In a large mixing bowl, combine the chopped salmon, panko breadcrumbs, mayonnaise, chives, red onion, egg, salt, and pepper. Mix until well combined.
- Form the mixture into small croquettes, about 1 inch in diameter.
- Heat vegetable oil in a frying pan over medium heat. Fry the croquettes until they are golden brown and crispy on all sides, about 3-4 minutes per side.
- Remove the croquettes from the pan and place them on paper towels to drain any excess oil.
- To serve, place a croquette on top of each slice of salmon sashimi.
