For the Chicken Gyros:
- 1 lb boneless, skinless chicken thighs, cut into strips
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 tablespoon dried oregano
- 1 tablespoon paprika
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- Salt and pepper, to taste
- 4 pita breads or flatbreads
For the Homemade Tzatziki:
- 1 cup plain Greek yogurt
- 1/2 cucumber, grated and excess moisture squeezed out
- 2 cloves garlic, minced
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
- 1 tablespoon lemon juice
- Salt and pepper, to taste
For Serving:
- Lemon wedges
- Fresh parsley or dill, for garnish
Instructions
- Marinate and Cook the Chicken:
- In a large bowl, combine olive oil, minced garlic, oregano, paprika, cumin, coriander, salt, and pepper.
- Add the chicken strips and toss to coat evenly. Let marinate for at least 30 minutes in the refrigerator.
- Grill the Chicken:
- Preheat a grill or grill pan over medium-high heat.
- Grill the chicken strips for 4-5 minutes on each side, or until fully cooked and charred with grill marks.
- Make the Tzatziki:
- In a medium bowl, mix together Greek yogurt, grated cucumber, minced garlic, chopped dill, lemon juice, salt, and pepper.
- Stir until well combined. Adjust seasoning to taste.
- Assemble the Gyros:
- Warm the pita breads in the oven or on a skillet.
- Fill each pita with grilled chicken strips.
- Top with a generous dollop of homemade tzatziki.
- Garnish with lemon wedges and fresh parsley or dill.
Notes
For added crunch, include sliced red onions and tomatoes in the gyros. You can also use store-bought tzatziki if short on time.
