- 4 slices sourdough bread
- 4 oz Gouda cheese, sliced
- 1 cup mushrooms, sliced
- 1/2 onion, thinly sliced
- 2 tbsp butter
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat. Add sliced mushrooms and onions, and sauté until golden and soft. Season with salt and pepper. Set aside.
- Butter one side of each bread slice. On the unbuttered side, layer Gouda cheese, roasted mushrooms, and onions.
- Top with another slice of bread, butter side out.
- In a clean skillet, cook each sandwich on medium heat until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.
- Serve hot and enjoy the melty goodness.
