Ingredients

  • 4 slices sourdough bread
  • 4 oz Gouda cheese, sliced
  • 1 cup mushrooms, sliced
  • 1/2 onion, thinly sliced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  • Heat olive oil in a skillet over medium heat. Add sliced mushrooms and onions, and sauté until golden and soft. Season with salt and pepper. Set aside.
  • Butter one side of each bread slice. On the unbuttered side, layer Gouda cheese, roasted mushrooms, and onions.
  • Top with another slice of bread, butter side out.
  • In a clean skillet, cook each sandwich on medium heat until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.
  • Serve hot and enjoy the melty goodness.
