A refreshing and savory salad with the sweet flavors of grilled peaches, spiced pecans, feta cheese, and a tangy honey vinaigrette. This vibrant dish makes for a perfect summer side or light meal.


Ingredients

  • 2 peaches, halved and pitted
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/2 cup pecans
  • 1 teaspoon curry powder
  • 4 cups mixed greens
  • 1/4 cup crumbled feta cheese
  • 1/4 cup dried cranberries
  • 1/4 cup honey
  • 2 tablespoons white wine vinegar
  • 1/4 cup olive oil

Instructions

  • Preheat grill to medium-high heat.
  • Brush peach halves with olive oil and season with salt and pepper.
  • Grill peaches for 3-4 minutes per side, until grill marks appear.
  • In a small bowl, toss pecans with curry powder and a pinch of salt.
  • Toast pecans in a dry skillet over medium heat for 2-3 minutes, stirring frequently.
  • In a large bowl, combine mixed greens, feta cheese, dried cranberries, grilled peaches, and curry pecans.
  • In a separate small bowl, whisk together honey, white wine vinegar, and olive oil to make the vinaigrette.
  • Drizzle honey vinaigrette over the salad and toss to combine.
  • Serve immediately and enjoy!

Notes

For a vegan version, omit the feta cheese and use a plant-based sweetener instead of honey. If you don’t have a grill, the peaches can be roasted or pan-seared.
