- 2 peaches, halved and pitted
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1/2 cup pecans
- 1 teaspoon curry powder
- 4 cups mixed greens
- 1/4 cup crumbled feta cheese
- 1/4 cup dried cranberries
- 1/4 cup honey
- 2 tablespoons white wine vinegar
- 1/4 cup olive oil
Instructions
- Preheat grill to medium-high heat.
- Brush peach halves with olive oil and season with salt and pepper.
- Grill peaches for 3-4 minutes per side, until grill marks appear.
- In a small bowl, toss pecans with curry powder and a pinch of salt.
- Toast pecans in a dry skillet over medium heat for 2-3 minutes, stirring frequently.
- In a large bowl, combine mixed greens, feta cheese, dried cranberries, grilled peaches, and curry pecans.
- In a separate small bowl, whisk together honey, white wine vinegar, and olive oil to make the vinaigrette.
- Drizzle honey vinaigrette over the salad and toss to combine.
- Serve immediately and enjoy!
Notes
For a vegan version, omit the feta cheese and use a plant-based sweetener instead of honey. If you don’t have a grill, the peaches can be roasted or pan-seared.
