These Grilled Salmon Skewers are perfect for a light, flavorful meal. Marinated in a zesty lemon-garlic mixture and grilled to perfection, the salmon is served with a cool and creamy dill yogurt sauce. Ideal for a summer barbecue or an easy weeknight dinner!


Ingredients

  • 1 lb salmon, skin removed and cut into chunks
  • 1 lemon, juiced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 cup Greek yogurt
  • 2 tbsp fresh dill, chopped
  • 1 tsp honey
  • Wooden skewers, soaked in water

Instructions

  • In a bowl, combine lemon juice, garlic, olive oil, salt, and pepper. Add the salmon chunks to the marinade and toss to coat. Marinate for 30 minutes.
  • While the salmon is marinating, prepare the creamy dill yogurt sauce by mixing Greek yogurt, chopped dill, and honey in a separate bowl. Set aside.
  • Thread the marinated salmon onto the wooden skewers.
  • Preheat the grill to medium-high heat. Grill the salmon skewers for 4-5 minutes per side, or until the salmon is cooked through and slightly charred.
  • Serve the grilled salmon skewers hot, with the creamy dill yogurt sauce on the side for dipping.

Notes

  • If you prefer a slightly sweeter sauce, you can increase the amount of honey.
  • You can substitute the fresh dill with dried dill if needed, but fresh dill gives the sauce a brighter flavor.
  • For an extra smoky flavor, try grilling the salmon on a cedar plank.
