Description

A wholesome and hearty dish combining lean ground turkey, tender sweet potatoes, and fresh zucchini, all baked to perfection with a sprinkle of parmesan cheese. This casserole is a nutritious and satisfying meal for any occasion.


Ingredients

  • 1 lb ground turkey

  • 2 medium sweet potatoes, peeled and diced

  • 2 small zucchinis, diced

  • 2/3 cup shredded parmesan cheese

  • 1 1/2 tsp garlic powder

  • 1 tsp dried rosemary

  • 5 tbsp olive oil

  • Salt and pepper, to taste


Instructions

  • Preheat your oven to 375°F (190°C).

  • In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the ground turkey, breaking it apart as it cooks. Season with garlic powder, rosemary, salt, and pepper. Cook until browned and fully cooked through, about 7-10 minutes.

  • While the turkey is cooking, heat the remaining 3 tablespoons of olive oil in another pan over medium heat. Add the diced sweet potatoes and cook until they begin to soften, about 10 minutes.

  • Add the diced zucchinis to the sweet potatoes and continue to cook for an additional 5 minutes, until all vegetables are tender.

  • In a large mixing bowl, combine the cooked turkey mixture with the sautéed sweet potatoes and zucchini. Mix well.

  • Transfer the mixture into a greased 9×13-inch baking dish. Sprinkle the shredded parmesan cheese evenly over the top.

  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and golden brown.

  • Remove from the oven and let it cool for a few minutes before serving.

Notes

  • For added flavor, consider sprinkling a pinch of chili flakes or smoked paprika before baking.

  • To make this dish dairy-free, substitute the parmesan cheese with a dairy-free alternative.
