These vibrant skewers combine sweet pineapple and savory ham with colorful vegetables, perfect for grilling and summer gatherings.


Ingredients

  • 1 lb (450 g) ham, cut into 1-inch cubes
  • 1 fresh pineapple, peeled, cored, and cut into 1-inch chunks
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 red onion, cut into 1-inch pieces
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons olive oil
  • 2 tablespoons rice vinegar
  • 1 tablespoon garlic, minced
  • 1 tablespoon fresh ginger, minced
  • Skewers (wooden or metal)
  • Salt and pepper to taste

Instructions

  • In a small bowl, whisk together soy sauce, honey, olive oil, rice vinegar, garlic, and ginger to make the marinade.
  • In a large bowl, combine the ham cubes and pineapple chunks. Pour half of the marinade over them and toss to coat. Cover and marinate in the refrigerator for 30 minutes.
  • Soak wooden skewers in water for 30 minutes (if using metal skewers, skip this step).
  • Preheat the grill to medium heat.
  • Thread the marinated ham, pineapple, red bell pepper, green bell pepper, and red onion alternately onto the skewers.
  • Grill the skewers for 10-15 minutes, turning occasionally and basting with the remaining marinade, until the ham is heated through and the vegetables are slightly charred.
  • Season with salt and pepper to taste and serve hot.

Notes

Serve with a side of rice or a fresh salad for a complete meal.
