- ½ cup cocoa powder
- 1 teaspoon baking powder
- ¼ teaspoon salt
- ½ cup unsalted butter (softened)
- ½ cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- ¼ cup milk
- ¼ cup fruit jam (raspberry, strawberry, or your favorite flavor)
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- In a separate bowl, cream the softened butter and granulated sugar together until light and fluffy.
- Add the egg and vanilla extract to the butter-sugar mixture and beat until combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Add the milk and stir until the dough comes together.
- Roll the dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheet.
- Use your thumb or the back of a spoon to press an indentation into the center of each cookie.
- Fill each indentation with about ½ teaspoon of fruit jam.
- Bake for 10-12 minutes, or until the cookies are firm to the touch.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
- Be sure not to overbake the cookies. They should remain soft in the center.
- Feel free to experiment with different jam flavors for the thumbprint filling.
- You can also drizzle melted chocolate over the cookies for extra chocolatey goodness!
