Description

This stunning heart-shaped pavlova features a crisp, airy meringue base topped with lightly sweetened whipped cream and fresh, vibrant mixed berries. It’s the perfect dessert for a special occasion, offering both elegance and a burst of freshness.

For the Pavlova:

  • 4 large egg whites
  • 1 cup granulated sugar
  • 1 tsp pure vanilla extract
  • 1 tsp white vinegar
  • 2 tsp cornstarch
  • Pinch of salt

For the Berries and Whipped Cream:

  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 1 cup mixed berries (strawberries, raspberries, blueberries)

Instructions

  • Preheat the oven to 250°F (120°C). Line a baking sheet with parchment paper and trace a heart shape to guide the pavlova’s outline.
  • In a clean, dry bowl, beat the egg whites with a pinch of salt until soft peaks form.
  • Gradually add the granulated sugar, 1 tablespoon at a time, while continuing to beat until stiff peaks form and the meringue is glossy.
  • Add the vanilla extract, white vinegar, and cornstarch, and gently fold them into the meringue.
  • Spoon the meringue mixture onto the prepared baking sheet, following the heart shape. Use the back of a spoon to smooth and shape the edges.
  • Bake the pavlova for 1 hour and 15 minutes, or until the meringue is firm to the touch and slightly cracked on the surface. Turn off the oven and let the pavlova cool inside with the door slightly ajar.
  • While the pavlova cools, whip the heavy cream with the powdered sugar and vanilla extract until soft peaks form.
  • Once the pavlova has completely cooled, top it with the whipped cream and fresh mixed berries.
  • Serve immediately and enjoy!

Notes

  • Make sure the egg whites are free of yolk, as any fat will prevent the meringue from forming properly.
  • You can prepare the meringue base a day ahead and store it in an airtight container. Just add the whipped cream and berries right before serving.
  • The pavlova is naturally gluten-free, making it a great option for gluten-sensitive guests.
