Description

Ingredients

  • 1 tablespoon olive oil

  • 1 lb (450 g) lean ground turkey

  • 1 medium red or yellow onion, diced

  • 2 tablespoons chili powder

  • 1 teaspoon ground cumin

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon dried oregano

  • 1 teaspoon fine sea salt (or to taste)

  • 1/4 teaspoon black pepper (or to taste)

  • 28 oz (796 g) canned diced tomatoes, with juice

  • 15 oz (425 g) tomato sauce

  • 15 oz (425 g) black beans, drained and rinsed

  • 15 oz (425 g) kidney beans, drained and rinsed

  • 15 oz (425 g) pinto beans or white beans, with juice

  • 2 oz (57 g) jar of diced jalapeños or mild green chiles (or to taste)

  • 15 oz (425 g) canned corn, drained (or use frozen or fresh corn kernels)

  • 1/2 cup (120 ml) chicken stock or water, or as needed to thin the chili


Instructions

  • In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 5 minutes.

  • Add the ground turkey to the pot and cook until browned, breaking it apart with a spoon as it cooks.

  • Stir in the chili powder, cumin, garlic powder, oregano, salt, and black pepper. Cook for 1 minute to toast the spices.

  • Add the diced tomatoes, tomato sauce, black beans, kidney beans, pinto beans, jalapeños (or green chiles), corn, and chicken stock (or water). Stir to combine.

  • Bring the chili to a simmer, then reduce the heat to low. Cover and let it simmer for at least 30 minutes, stirring occasionally. Add more stock or water if the chili becomes too thick.

  • Taste and adjust seasoning if necessary before serving.

Notes

  • For a spicier chili, increase the amount of jalapeños or add a dash of hot sauce.

  • This chili can be made ahead and stored in the refrigerator for up to 3 days or frozen for up to 3 months.
